Double-sided sharpening stone 400/1000 for sharpening kitchen knives manufactured by the Japanese brand KAI.
The 400 grit (coarse) is for roughing and correcting imperfections and the 1000 grit (finer-medium) is for the finer finish of sharpening.
These sharpening stones should be wet for 5-10 minutes until the air bubbles released by the stone disappear. During sharpening keep the stone wet at all times.
To sharpen, keep the knife firm to the stone with an angle of 15-20 degrees depending on the knife.
